Not quite! We pick our peaches tree-ripe, carefully pack them into boxes, and start driving them to your location on The Peach Truck Tour all in the same day. They should be firm when you receive them and will need a few days on your counter to condition. Conditioning is the term for letting the peaches soften.
It usually takes just a couple days for the peaches to condition once you get them, but each peach softens at its own pace. We recommend you remove them from the box so they don't smush each other. Once they give a little when lightly squeezed, they're ready to enjoy or store.
What if I want to freeze or can them?
If you want to freeze or can your peaches, we recommend you plan to process them a few days after you pick them up on The Peach Truck Tour so they have time to condition to your preferred softness. If they're soft before you have time to use them, you can keep them in the fridge for up to a week.
What if I want to cook or bake with them?
Because peaches soften with warmth, you can cook or bake with firm, tree-ripe peaches as long as the recipe doesn't require soft peaches. They'll soften in the oven or on the stove with the heat. Our team loves to grill a few peaches while we wait for a box to condition.
